How to Cook Organic Chicken Cooked in Apple Cyder
Chicken is quite rightly one of the best loved meats in the world.
It is low in fat, is a great source of protein, exceedingly versatile and is the key ingredient in a lot of diet recipes. If you can get hold of an organic chicken, even better, as it will be free from any hormones or other unhealthy additions. It Is also a sound policy for animal welfare, as most of the mass produced chickens are forced to live in conditions that are quite disgraceful.
If you are not worried about weight loss, relax, there is more to chicken than low fat recipes. All the same, almost all recipes that feature chicken will be, generally, better for you than the same recipes prepared using different meats.
Here is one such recipe that is sure to satisfy your family and friends.
The recipe needs:
One chicken (approximately 3.5 lb)
Two cupful of cider
6 Fresh Apples (peeled and quartered)
salt (as required)
pepper (as required)
One teaspoonful cornstarch
1/2 cupful of whipping cream
One Tbs of fresh lemon juice
1/3 cupful of butter
Two tablespoonfuls of oil (olive)
A quarter teaspoon cinnamon (optional)
Four spring onions, (chopped well)
Two whole cloves
A quarter teaspoonful ground ginger
One sprig of parsley, (chopped well, for decoration)
1/2 teaspoon dried thyme
Two tsp. of sugar
Instructions:
Wash the Organic Chicken and dry it well.
Mix a small amount of pepper and salt amd smooth it into the chicken (outside and inside)
Drizzle the lemon juice over the pieces of apple.
Take a large frying pan or skillet and melt half the butter and mix in the olive oil.
Add half of the apples to the pan and cook slowly for five min. (until they have browned a little)
Mix in the ground ginger and mix well, heating it a short while longer to allow the ground ginger to give up it’s flavours.
Stuff the bird with the apple mixture and close the chicken cavity by tying with string or by ‘pinning’ it with a metal or wooden skewer.
Melt the remaining butter into the pan and then add the chicken to the skillet and fry until the skin is browned a little, browning it all over.
Transfer the chicken to a large casserole pot with lid.
Take the apple that is left, the spring onions, cinnamon, dried thyme, cloves and sugar and add them all to the frying pan.
Fry gently for a couple of mins and pour in the apple cyder and increase the heat to start the mixture boiling.
When the apple cyder is boiling, add it the oven dish with the chicken and put the lid on the pot.
Put the pot in the oven and cook for about three quarters of an hour at 200C
Once the chicken is cooked, transfer it to a warmed plate whilst you prepare the cider gravy.
If there is any fat in the pot, skim it off and then boil off the juices until there is just about one cup remaining.
Add the cornstarch and cream, stirring until it is thick and creamy.
Season with salt and pepper, and then pour over the chicken
Serve with the chopped parsley sprinkled over the chicken.
